Juicy Blueberry Cheese Pie

Don’t you think that getting a handmade gift is more impressive than other stuff. For me, it’s truly is. Last week, it was my friend’s birthday so my roommate and I designed to make a BLUEBERRY CHEESE PIE for hers. And I am going to share how we did it so that you can make one for whoever you think they are special to you.

For whoever that never baked before, I can guarantee that you can easily make this one by following my step.

Here’re things needed for Blueberry Purée:     Here’re things needed for Cracker Crust:

– 300g of blueberry                                             – 400g of Original Ritz Cracker

– 50g of sugar                                                     – 120g of melted salted/unsalted butter

– 10g of gelatin powder

– 40g of cold water

Here’re things needed for Cream Cheese filling:

– 160Z of Original Philadelphia Cream Cheese

– 190-210g of sweetened condensed milk (Depends on how you like it)

– 1-1 1/2 tablespoons of fresh lime juice (Depends on how you like it)

– 20g of heavy cream (not necessarily)

“All ingredients are for 2 Blueberry Cheese Pie”


Start with the Blueberry Purée, put that 300g of blueberry into a pot with low heat. Then, put that 50g of sugar into the pot. And cook just until the sugar dissolves. Next, put that 10g of gelatin powder into a different small pot. Follow by that 40g of cold water. Let’s it distend for 5-10 minutes. And place the gelatin pot over low heat just until it dissolves. After that, pour the gelatin over the Blueberry Purée and mix it together. Then, just cool completely to the room temperature.

(I forgot to video this part, sorry guys)

Or you can just you a blueberry jam instead if you scared to make the Blueberry Purée because that’s the most difficult part.


While you’re waiting for the Blueberry Purée, let’s begin with the Cracker Crust. Put the cracker in the electronic blender and it blend it. Then, put those blended cracker into a bowl and followed by the melted butter. Next, toss together with spoon until the crust are well mixed. After that press into 9-inch pie plate nicely. Place it in the fridge for 20 minutes.


While you’re waiting for the Cracker Crust, let’s continue to work on Cream Cheese filling. Using an electronic mixer, beat the cream cheese, sweetened condensed milk, heavy cream and lime juice on medium to high speed until light and soft. Then, pour it over the Cracker Crust. Place it in the freezer for 30-45 minutes.


After all, when your Blueberry Purée is cool to a room temperature and your Cracker Crust with Cream Cheese filling are set. You can just pour the Blueberry Purée over the Cream Cheese nicely and top with the fresh blueberry. Now, your Blueberry Cheese Pie is ready to serve for your special one.
